  • 1 lb lean ground beef
  • 2 medium fresh jalapeños (diced)
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1 small onion (diced)
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté diced onions and jalapeños until softened, about 5 minutes.
  3. In a large bowl, mix together ground beef, cream cheese, shredded cheddar, sautéed onions and jalapeños, breadcrumbs, eggs, garlic powder, salt, and pepper until combined.
  4. Shape the mixture into a loaf on a parchment-lined baking sheet.
  5. Spread ketchup generously over the top of the meatloaf.
  6. Bake for 60-70 minutes until fully cooked (internal temperature reaches 160°F or 71°C). Let rest for 10 minutes before slicing.
