- 1 lb lean ground beef
- 2 medium fresh jalapeños (diced)
- 4 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 2 large eggs
- 1 small onion (diced)
- 1 tsp garlic powder
- Salt & pepper to taste
- 1/2 cup ketchup (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, sauté diced onions and jalapeños until softened, about 5 minutes.
- In a large bowl, mix together ground beef, cream cheese, shredded cheddar, sautéed onions and jalapeños, breadcrumbs, eggs, garlic powder, salt, and pepper until combined.
- Shape the mixture into a loaf on a parchment-lined baking sheet.
- Spread ketchup generously over the top of the meatloaf.
- Bake for 60-70 minutes until fully cooked (internal temperature reaches 160°F or 71°C). Let rest for 10 minutes before slicing.
