Instructions

  1. Trim excess fat from the chuck roast while leaving some marbling intact. Pat dry with paper towels.

  3. Preheat your smoker to 225°F (107°C) using hickory or mesquite wood chips.

  6. Rest the roast covered in foil for at least 30 minutes before slicing.
