  • 8 oz rotini pasta

  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to boil. Add rotini pasta and cook until al dente, about 8-10 minutes. Drain, reserving some pasta water.
  2. Sauté the Chicken: Heat olive oil in a skillet over medium-high heat. Season chicken breasts with Cajun seasoning and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
  3. Make the Sauce: In the same skillet, sauté minced garlic until fragrant (about 1 minute). Stir in heavy cream and additional Cajun seasoning.
  4. Combine: Slice rested chicken and add it back to the sauce along with cooked rotini. Stir gently to combine.
  5. Finish: Sprinkle Parmesan cheese over the mixture while stirring until melted. Adjust consistency with reserved pasta water if needed.
