- 3–4 fresh jalapenos, sliced
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 green onions, chopped (for garnish)
Instructions
- Marinate the chicken: In a bowl, combine soy sauce, honey, minced garlic, grated ginger, sesame oil, and sliced jalapenos. Add chicken pieces and let marinate in the fridge for at least 30 minutes.
- Sear the chicken: Heat oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and sear until golden brown on all sides (about 5-7 minutes).
- Add sauce: Pour reserved marinade into the skillet and cook until thickened and coats the chicken (about 4-5 minutes).
- Finish: Stir in chopped green onions during the last minute of cooking for added freshness. Serve hot over steamed rice or veggies.
