- 1 cup dried pinto beans (or 2 cans)
- 4 slices thick-cut bacon
- 1 medium sweet onion, chopped
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1/4 cup brown sugar
- 1 cup barbecue sauce
- 1 tsp mustard powder
- 2 cups low-sodium chicken broth
- 1/4 tsp cayenne pepper (adjust to taste)
Instructions
- If using dried beans, rinse and soak them overnight in water. If using canned beans, drain and rinse.
- In a skillet over medium heat, cook chopped bacon until crispy. Reserve some grease and set the bacon aside.
- In the same skillet, sauté onion and bell pepper in bacon grease until softened (about 5 minutes).
- In your crockpot, combine soaked pinto beans (if using dried), sautéed veggies, crispy bacon, minced garlic, brown sugar, barbecue sauce, mustard powder, cayenne pepper, and chicken broth.
- Stir well and cover; cook on low for 6-8 hours or high for 3-4 hours until beans are tender.
- Adjust seasoning if needed before serving warm.
