Ingredients

  • 1 cup dried pinto beans (or 2 cans)
  • 4 slices thick-cut bacon
  • 1 medium sweet onion, chopped
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1 cup barbecue sauce
  • 1 tsp mustard powder
  • 2 cups low-sodium chicken broth
  • 1/4 tsp cayenne pepper (adjust to taste)

Instructions

  1. If using dried beans, rinse and soak them overnight in water. If using canned beans, drain and rinse.
  2. In a skillet over medium heat, cook chopped bacon until crispy. Reserve some grease and set the bacon aside.
  3. In the same skillet, sauté onion and bell pepper in bacon grease until softened (about 5 minutes).
  4. In your crockpot, combine soaked pinto beans (if using dried), sautéed veggies, crispy bacon, minced garlic, brown sugar, barbecue sauce, mustard powder, cayenne pepper, and chicken broth.
  5. Stir well and cover; cook on low for 6-8 hours or high for 3-4 hours until beans are tender.
  6. Adjust seasoning if needed before serving warm.
