  • 2 cups shredded cabbage (mix of green and purple)
  • 1 cup grated carrots
  • 4 green onions (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 4 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 cups cooked rice or quinoa
  • Fresh cilantro (for garnish)

Instructions

  1. Prepare your ingredients by chopping the chicken into bite-sized pieces and setting aside.
  2. In a large skillet over medium heat, add 1 tablespoon of oil and sauté the chicken until golden brown and cooked through, approximately 5-7 minutes.
  3. Stir in minced garlic and ginger; cook until fragrant for about 1 minute.
  4. Add the shredded cabbage, grated carrots, and chopped green onions to the skillet; sauté for an additional 3-4 minutes until veggies soften.
  5. Pour in soy sauce and sesame oil; mix well and cook for another 2-3 minutes until heated through.
  6. Serve over cooked rice or quinoa and top with fresh cilantro if desired.
