  • 3 lbs beef chuck roast
  • 1 bottle (750ml) good-quality red wine (preferably Pinot Noir)
  • 3 medium carrots, chopped
  • 2 large yellow onions, chopped
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 6 oz bacon lardons
  • 2 cups low-sodium beef broth
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven over medium heat, cook bacon lardons until crispy. Remove and set aside.
  3. Season beef with salt and pepper; sear in the bacon fat until browned on all sides.
  4. Add onions, carrots, garlic, and mushrooms; sauté until onions are translucent.
  5. Pour in red wine to deglaze the pan and scrape up brown bits; add beef broth, thyme, and bay leaves.
  6. Cover and braise in the oven for 2-3 hours until beef is fork-tender.
