Ingredients

  • 8 oz Shirataki noodles
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 cup bell peppers, diced (mixed colors)
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 2 tsp dried Italian herbs
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • Salt & pepper to taste

Instructions

  1. Rinse Shirataki noodles under cold water for 1-2 minutes, drain well, and pat dry.
  2. Chop cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, red wine vinegar, dried herbs, salt, and pepper.
  4. In a large mixing bowl, combine noodles and chopped veggies. Pour dressing over the mixture and gently toss to coat.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled as a refreshing side dish or appetizer.
