  • 4 medium russet or Yukon gold potatoes (about 1.5 lbs), cubed
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1/4 cup green onions, chopped
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Wash and scrub the potatoes thoroughly; then cut them into uniform bite-sized cubes.
  2. In a large bowl, toss the cubed potatoes with olive oil, salt, pepper, and smoked paprika until well-coated.
  3. Heat a large skillet over medium-high heat. Once hot, add the seasoned potatoes in a single layer.
  4. Cook undisturbed for about 5-7 minutes until they start browning. Then toss using a spatula for even cooking.
  5. Continue cooking for an additional 15-20 minutes until crispy outside and tender inside.
  6. Once cooked, sprinkle shredded cheddar cheese and bacon bits over the top while still on heat to melt.
  7. Remove from heat and garnish with chopped green onions before serving hot.
