  • 3 medium zucchinis, sliced
  • 1 lb lean ground beef or turkey
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent, then add minced garlic and ground meat. Cook until browned.
  3. Layer sliced zucchini in the skillet, stirring gently until slightly softened.
  4. In a bowl, mix marinara sauce with beaten eggs and Italian seasoning until smooth.
  5. In a greased baking dish, layer half of the zucchini mixture and top with half of the sauce mixture. Repeat these layers.
  6. Sprinkle mozzarella cheese generously on top.
