These delightful hand pies feature a flaky crust filled with a sweet-tart blueberry mixture, all shaped into playful ghost forms. Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ½ cup cold vegan butter
  • 1 cup fresh blueberries
  • ½ cup granulated sugar (adjust to taste)
  • 1 tbsp lemon juice
  • 3 tbsp unsweetened almond milk
  • Powdered sugar for dusting

Instructions

  1. Prepare the dough by mixing flour and vegan butter in a bowl until crumbly. Gradually add almond milk to form a smooth dough. Chill in the fridge.
  2. Create the filling by combining blueberries, granulated sugar, and lemon juice in another bowl.
  3. Roll out the chilled dough to about 1/8 inch thick. Use a cookie cutter to cut out ghost shapes.
  4. Spoon blueberry filling onto half of each shape, fold over, and seal edges with a fork.
  5. Preheat oven to 375°F (190°C) and bake for 20-25 minutes until golden brown.
