  • 1 pound fresh gnocchi
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 30 seconds), then add spinach until wilted.
  3. In a bowl, mix ricotta, half of the mozzarella, half of the Parmesan, herbs, salt, and pepper until well combined.
  4. Fold cooked gnocchi into the cheese mixture along with sautéed spinach and garlic.
  5. Transfer to the baking dish and top with remaining mozzarella and Parmesan.
  6. Bake for 25-30 minutes until golden brown and bubbly.
