  • 4 cups sweet potatoes (about 4 medium, peeled and cubed)
  • 1/2 cup dark brown sugar
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter (divided)
  • 2 large eggs
  • 1/2 cup whole milk or cream
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil sweet potato cubes in salted water until tender, about 15-20 minutes. Drain and return to pot.
  3. Add brown sugar, 1/4 cup melted butter, eggs, milk, vanilla extract, cinnamon, and salt to the sweet potatoes. Mix until smooth.
  4. In a separate bowl, combine chopped pecans with remaining melted butter and a sprinkle of brown sugar for the topping.
  5. Spread the sweet potato mixture into a greased baking dish and sprinkle the pecan topping evenly over it.
  6. Bake for 25-30 minutes until the top is golden brown. Allow to cool slightly before serving.
