  • 3 large sweet potatoes (about 2 lbs), peeled and sliced into 1/8-inch rounds
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant.
  3. Layer half of the sweet potato slices in a baking dish, followed by half of the sautéed garlic and half of the heavy cream. Season with salt, pepper, and nutmeg.
  4. Repeat layers with remaining sweet potatoes, garlic, cream, salt, and pepper.

  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
