  • 45 medium sweet potatoes (about 2 lbs)
  • 1/2 cup pure maple syrup
  • 1/4 cup unsalted butter, melted
  • 1/2 cup chopped pecans
  • 1 tsp ground cinnamon
  • 1/2 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup whole milk or heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl. Mix in melted butter, maple syrup, eggs, milk, vanilla extract, cinnamon, and brown sugar until smooth.
  4. Transfer the mixture to a greased 9×13-inch baking dish.
  5. In a separate bowl, combine chopped pecans with melted butter and brown sugar. Sprinkle over the sweet potato mixture.
  6. Bake for 30-35 minutes or until golden brown and bubbly.
