- 4–5 medium sweet potatoes (about 2 lbs)
- 1/2 cup pure maple syrup
- 1/4 cup unsalted butter, melted
- 1/2 cup chopped pecans
- 1 tsp ground cinnamon
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/4 cup whole milk or heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
- Drain and mash the sweet potatoes in a large bowl. Mix in melted butter, maple syrup, eggs, milk, vanilla extract, cinnamon, and brown sugar until smooth.
- Transfer the mixture to a greased 9×13-inch baking dish.
- In a separate bowl, combine chopped pecans with melted butter and brown sugar. Sprinkle over the sweet potato mixture.
- Bake for 30-35 minutes or until golden brown and bubbly.
