  • 2 cups sugar cookie crumbs (about 12 cookies)
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup heavy cream
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Crush sugar cookies into fine crumbs and combine with melted butter until sandy.
  2. Press the mixture firmly into the bottom of a springform pan. Bake for 10 minutes until golden, then let cool.
  3. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, mixing well. Add eggs one at a time and mix until combined. Stir in vanilla.
  4. Pour the filling over the cooled crust and smooth the top. Bake at 325°F (160°C) for 50-60 minutes until edges are set but center jiggles slightly.

  6. Once cheesecake is cool, pour ganache over the top and refrigerate for at least two hours or overnight.
