  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 3 cups all-purpose flour, sifted
  • 1 tsp baking powder
  • 1 cup fresh strawberries, diced
  • ½ cup cocoa powder (for ganache)
  • ½ cup heavy cream (for ganache)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy (3-5 minutes).
  3. Add eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. In another bowl, sift together flour and baking powder. Gradually mix into the wet ingredients alternately with heavy cream until just combined.
  5. Gently fold in diced strawberries.
  6. Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. For the ganache, heat heavy cream until simmering; pour over cocoa powder in a bowl and stir until smooth.
  8. Once the cake cools completely, drizzle chocolate ganache over the top.
