  • 1 pound raw shrimp (deveined)
  • 1 ripe avocado (sliced)
  • 1 cucumber (sliced into thin strips)
  • 2 tablespoons sriracha sauce (adjust for heat preference)
  • 2 tablespoons rice vinegar
  • 4 nori sheets (cut into squares)
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with 1¼ cups water according to package instructions.
  2. Mix cooked rice with rice vinegar and let cool.
  3. In a skillet over medium-high heat, sauté shrimp with salt and pepper until pink, about 3-4 minutes; drizzle with sriracha.
  4. Slice avocado and cucumber into thin strips.
  5. Assemble layers in a mold: sushi rice, shrimp, cucumber, avocado, more rice, and top with nori squares.
  6. Press gently to compact and remove mold. Sprinkle with sesame seeds before serving.
