  • 150g spicy chorizo (sliced)
  • 1 medium sweet onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients: Dice the onion and garlic, chop the pumpkin into cubes, and slice the chorizo.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent. Add minced garlic and sliced chorizo, cooking until browned.

  4. Pour in the vegetable broth to cover everything. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the pumpkin is soft.
