  • 1 cup corn kernels (fresh or canned)
  • 2 ripe avocados, cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup fresh cilantro leaves, chopped
  • 1/2 small red onion, thinly sliced
  • 3 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, mix lime juice, chili powder, cumin, salt, and pepper. Add chicken breasts and coat well.
  2. Cook the Chicken: Preheat grill or skillet to medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F (75°C). Let rest before slicing.
  3. Prepare the Salad Base: While chicken rests, chop romaine lettuce and mix with cilantro in a large bowl.
  4. Add Toppings: Incorporate cherry tomatoes, corn kernels, and black beans into the salad base.
  5. Add Avocado and Dressing: Toss in cubed avocado and drizzle with olive oil. Optionally squeeze more lime juice over salad.
  6. Toss Together: Use tongs to combine all ingredients thoroughly; taste-test and adjust seasoning if necessary.
