  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lemon juice
  • 1 tbsp honey

Instructions

  1. Preheat the smoker to 250°F (121°C) with your choice of wood chips (hickory or applewood recommended).
  2. In a bowl, combine olive oil, smoked paprika, garlic powder, salt, pepper, lemon juice, and honey. Mix well.
  3. Coat each chicken thigh generously with the marinade and let sit for at least 30 minutes.
  4. Place the marinated thighs on the smoker grates and close the lid.
  5. Smoke until the internal temperature reaches 165°F (74°C), about 2-3 hours.
  6. Remove from heat and rest for 10 minutes before serving.
