Ingredients

  • 4 medium zucchinis (about 1.5 lbs), sliced into ¼ inch rounds
  • 1 cup ricotta cheese (whole milk)
  • 2 cups marinara sauce
  • 2 cups shredded fresh mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup garlic croutons
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchini thinly and lay them on paper towels; sprinkle with salt to draw out moisture.
  3. On a large baking sheet, spread a thin layer of marinara sauce.
  4. Layer half of the zucchini slices over the sauce, followed by dollops of ricotta cheese.
  5. Sprinkle Italian seasoning and top with shredded mozzarella. Repeat the layers until all ingredients are used.
  6. Top with garlic croutons, drizzle with olive oil, and finish with grated Parmesan.
  7. Bake for 30-35 minutes until bubbly and golden brown.
