- 4–5 medium yellow onions
- 4 large russet potatoes
- 1 cup heavy cream
- 1 cup low-sodium beef broth
- 2 cups shredded Gruyere cheese (or Swiss)
- 1 tablespoon fresh thyme
- Salt & pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the onions thinly. In a skillet, melt butter and caramelize the onions over medium heat for about 25 minutes until golden brown.
- Peel and slice russet potatoes into thin rounds.
- In a bowl, whisk together heavy cream, beef broth, thyme, salt, and pepper.
- In a greased baking dish, layer half of the potato slices followed by half of the caramelized onions and drizzle some creamy mixture over them. Repeat layers.
- Top with shredded Gruyere cheese and bake uncovered for 45-50 minutes until bubbly and golden brown.
