  • 45 medium yellow onions
  • 4 large russet potatoes
  • 1 cup heavy cream
  • 1 cup low-sodium beef broth
  • 2 cups shredded Gruyere cheese (or Swiss)
  • 1 tablespoon fresh thyme
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the onions thinly. In a skillet, melt butter and caramelize the onions over medium heat for about 25 minutes until golden brown.
  3. Peel and slice russet potatoes into thin rounds.
  4. In a bowl, whisk together heavy cream, beef broth, thyme, salt, and pepper.
  5. In a greased baking dish, layer half of the potato slices followed by half of the caramelized onions and drizzle some creamy mixture over them. Repeat layers.
  6. Top with shredded Gruyere cheese and bake uncovered for 45-50 minutes until bubbly and golden brown.
