  • 1 lb pizza dough (store-bought or homemade)
  • 2 cups butternut squash, peeled and cubed
  • 1 medium Granny Smith apple, cored and thinly sliced
  • 8 oz fresh burrata cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1/4 cup pine nuts (optional)
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Toss the butternut squash and apple slices with olive oil, salt, pepper, and rosemary until evenly coated.
  3. Spread on a baking sheet lined with parchment paper and roast for approximately 20 minutes until tender.
  4. Roll out the pizza dough on a floured surface to your desired thickness; transfer to a pizza stone or baking sheet.
  5. Evenly layer the roasted squash and apple over the dough. Tear burrata into pieces and distribute them on top, adding pine nuts if desired.
  6. Bake for 12-15 minutes until the crust is golden brown and cheese is bubbly.
