  • 2 medium Flour Tortillas
  • 2 cups Yukon Gold Potatoes (peeled and diced)
  • 1 cup Shredded Cheddar Cheese
  • ½ medium Sweet Onion (diced)
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 2 tbsp Olive Oil (divided)

Instructions

  1. Boil potatoes in salted water until fork-tender; drain.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté onions until soft.
  3. Mash cooked potatoes with cumin and paprika until chunky.
  4. Spread mashed potatoes on half of each tortilla, sprinkle with cheese, then fold.
  5. Heat remaining olive oil in the skillet over medium-high heat and cook quesadillas until golden brown on both sides (3-4 minutes each).
  6. Cut into wedges and serve hot with sour cream or salsa.
