- 3–4 boneless, skinless chicken breasts
- 2 cups fresh corn (about 2 ears)
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (4 oz) diced green chiles
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp chili powder
- 4 cups low-sodium chicken broth
- Juice of 1 lime
- ½ cup fresh cilantro leaves, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until fragrant.
- Add whole chicken breasts; sear until golden brown on both sides (5-7 minutes).
