  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1/2 cup Irish whiskey
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper and sear until golden brown (6-7 minutes). Remove and set aside.
  2. In the same skillet, add chopped onions and minced garlic; sauté until translucent.
  3. Pour whiskey into the skillet, scraping up any brown bits. Simmer for 2-3 minutes.
  4. Stir in heavy cream and chicken broth until well combined. Return chicken to the skillet.
  5. Add thyme and parsley; simmer on low heat for an additional 10-15 minutes until chicken is tender.
  6. Serve hot with extra parsley for garnish.
