- 1/2 cup Irish whiskey
- 1 cup heavy cream
- 1 cup low-sodium chicken broth

- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper and sear until golden brown (6-7 minutes). Remove and set aside.
- In the same skillet, add chopped onions and minced garlic; sauté until translucent.
- Pour whiskey into the skillet, scraping up any brown bits. Simmer for 2-3 minutes.
- Stir in heavy cream and chicken broth until well combined. Return chicken to the skillet.
- Add thyme and parsley; simmer on low heat for an additional 10-15 minutes until chicken is tender.
- Serve hot with extra parsley for garnish.
