Ingredients

  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 nori sheets
  • 1 cucumber (Kirby preferred)
  • 1 ripe avocado
  • 8 ounces imitation crab meat
  • Soy sauce (for dipping)
  • Wasabi and pickled ginger (optional)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes).
  2. Mix cooked rice with rice vinegar, sugar, and salt in a bowl while warm; let cool slightly.
  3. Slice cucumber into thin sticks and avocado into slices.
  4. On a bamboo mat, place a nori sheet shiny side down. Spread 1 cup of seasoned rice on the nori, leaving an inch at the top.
  5. Lay cucumber sticks, avocado slices, and crab meat across the center of the rice. Roll tightly using the mat.
  6. With a wet knife, cut the roll into bite-sized pieces.
