  • 1 cup sushi rice
  • 3 tablespoons seasoned rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 ounces imitation crab meat (or real crab)
  • 1/2 cucumber, sliced into thin strips
  • 1/2 ripe avocado, sliced into thin strips
  • 4 sheets nori (seaweed)
  • Soy sauce for dipping
  • Wasabi (optional)

Instructions

  1. Rinse sushi rice under cold water until it runs clear. Cook according to package instructions or in a rice cooker. Allow to cool slightly.
  2. In a small bowl, mix rice vinegar, sugar, and salt. Gently fold into the warm rice until well combined.
  3. Slice avocado and cucumber into uniform thin strips while the rice cools completely.
  4. Place a bamboo sushi mat on your countertop and lay down one sheet of nori shiny-side down. Spread about ¾ cup of sushi rice evenly over the nori, leaving a small edge at the top.
  5. Layer crab meat, cucumber, and avocado across the center of the rice-covered nori. With gentle pressure, roll away from you using the mat to guide it tightly.
  6. Use a sharp knife dipped in water to cut each roll into six pieces for serving.
