  • 3 tbsp fresh rosemary
  • 3 tbsp fresh thyme
  • 2 tbsp fresh parsley
  • 6 garlic cloves, smashed
  • 2 oranges, quartered
  • 1 lemon, quartered
  • 1 cup mixed olives
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 cup white wine (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and season generously inside and out with salt and pepper.
  3. Stuff the cavity with garlic, fresh herbs, lemon, and orange quarters.
  4. Drizzle olive oil over the chicken, ensuring it's well-coated.
  5. Roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
  6. In the last 15 minutes of roasting, scatter olives around the chicken.
  7. Let rest for 10 minutes before carving.
