  • 2 cups cooked boneless, skinless chicken breasts
  • 1 package (17.3 oz) thawed puff pastry sheets
  • 1 cup Greek yogurt
  • ½ cup finely chopped celery
  • ¼ cup minced red onion
  • 1 tsp Dijon mustard
  • 2 tbsp fresh herbs (dill or parsley)
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Prepare the chicken filling by shredding cooked chicken and mixing it in a bowl with Greek yogurt, celery, red onion, mustard, herbs, salt, and pepper until well combined.
  2. Roll out the thawed puff pastry on a floured surface to about 1/8-inch thickness.
  3. Cut circles using a round cutter about 3 inches wide.
  4. Place one tablespoon of the chicken filling in the center of each circle. Brush the edges with egg wash and fold over, crimping the edges with a fork.
  5. Preheat the oven to 400°F (200°C). Arrange puffs on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
