  • 4 bone-in, skin-on chicken thighs
  • 4 cups water (for poaching)
  • 2 cups jasmine rice
  • 3 cups chicken broth (from poaching)
  • 4 cloves garlic, smashed
  • 2-inch piece fresh ginger, sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • Cucumber slices (for garnish)
  • Chili sauce (to taste)

Instructions

  1. Rinse the chicken thighs under cold water and place them in a large pot. Cover with water, adding sliced ginger and garlic for flavor.
  2. Bring to a gentle boil over medium heat, then reduce to low heat and simmer covered for about 30 minutes until tender.
  3. While the chicken cooks, rinse jasmine rice until the water runs clear. In another pot, combine rinsed rice with chicken broth from the poaching pot.
  4. Bring the rice mixture to a boil, cover tightly, and reduce heat to simmer for 15-20 minutes until liquid is absorbed. Let it sit covered for another 10 minutes.
  5. Remove chicken from broth once cooked and let cool slightly before slicing into bite-sized pieces; drizzle with sesame oil.
  6. Serve the fluffy rice alongside chicken slices garnished with cucumber and sauces on the side.
