  • 1 lb lean ground beef or turkey
  • 1 packet taco seasoning (about 1 oz)
  • 14.5 oz can diced fire-roasted tomatoes
  • 1 cup shredded sharp cheddar cheese
  • 1 cup chopped bell peppers (any color)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 15 oz can black beans, drained and rinsed (optional)

Instructions

  1. Prepare your ingredients by chopping onions, bell peppers, and garlic.
  2. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  3. Add browned beef to the crockpot along with diced tomatoes, taco seasoning, onions, bell peppers, garlic, and beef broth.
  4. Stir in uncooked rotini pasta; combine well.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours until pasta is tender.
  6. In the last 15 minutes of cooking, sprinkle cheese on top and re-cover until melted.
