- 1 lb lean ground beef or turkey
- 1 packet taco seasoning (about 1 oz)
- 14.5 oz can diced fire-roasted tomatoes
- 1 cup shredded sharp cheddar cheese
- 1 cup chopped bell peppers (any color)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 15 oz can black beans, drained and rinsed (optional)
