- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 3 tbsp Cajun seasoning
- 1 cup heavy cream (or half-and-half)
- 8 oz penne pasta (uncooked)
- 2 bell peppers, diced (red or yellow)
- 1 yellow onion, diced
- 2 cups low-sodium chicken broth
- ½ cup grated Parmesan cheese
Instructions
- Dice chicken breasts and chop bell peppers and onion. Place in the crock pot.
- Add Cajun seasoning and minced garlic to the chicken and veggies.
- Pour heavy cream over the mixture.
- Add chicken broth but hold off on adding pasta until later.
- Cover and cook on low for 6 hours or high for 3 hours.
- About 30 minutes before serving, stir in uncooked penne pasta.
