  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 1 cup bell peppers (red and green), chopped
  • 3 tbsp sweet paprika
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides; remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (about 5 minutes).
  3. Stir in paprika and bell peppers; cook for an additional 2-3 minutes.
  4. Return beef to the pot; add diced tomatoes, bay leaves, broth, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
  6. Remove bay leaves before serving; garnish with fresh parsley if desired.
