Instructions
- Heat olive oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides; remove and set aside.

- Return beef to the pot; add diced tomatoes, bay leaves, broth, salt, and pepper. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaves before serving; garnish with fresh parsley if desired.
