- 1 tsp dried thyme
- 2 bay leaves

Instructions
- Heat a large pot over medium-high heat. Add oil and sear the beef on all sides for about 5-7 minutes until browned.
- Remove the beef and set aside. In the same pot, sauté diced onions until translucent (about 3-4 minutes).
- Stir in minced garlic and bell peppers; cook until softened (about 5 minutes).
- Return beef to the pot, add tomato paste, and stir well.
- Pour in beef broth, scraping up any browned bits from the bottom.
- Season with paprika, thyme, bay leaves, salt, and pepper; stir to combine.
- Reduce heat to low and let simmer for about 1.5 hours or until beef is fork-tender.
- Remove bay leaves before serving warm with bread or over noodles.
