  • 34 lbs chuck roast
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 8 corn or flour tortillas
  • Fresh cilantro, chopped (to taste)
  • Salsa or pico de gallo (to taste)

Instructions

  1. Gather all ingredients. Chop onion and garlic; season the chuck roast with salt and pepper.
  2. In a large pot over medium-high heat, sear the chuck roast on both sides until browned.
  3. Remove the roast and sauté onions and garlic in the same pot until softened (about 5 minutes).
  4. Return the roast to the pot. Add beef broth, cumin, and chili powder; bring to a simmer and cover tightly.
  5. Reduce heat to low and cook for 4-5 hours until fork-tender.
  6. Shred the meat in the pot using two forks. Serve with warm tortillas, fresh cilantro, and salsa.
