- 3–4 lbs chuck roast
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup low-sodium beef broth
- 2 tsp cumin
- 2 tsp chili powder
- 8 corn or flour tortillas

- Salsa or pico de gallo (to taste)
Instructions
- Gather all ingredients. Chop onion and garlic; season the chuck roast with salt and pepper.
- In a large pot over medium-high heat, sear the chuck roast on both sides until browned.
- Remove the roast and sauté onions and garlic in the same pot until softened (about 5 minutes).
- Return the roast to the pot. Add beef broth, cumin, and chili powder; bring to a simmer and cover tightly.
- Reduce heat to low and cook for 4-5 hours until fork-tender.
