  • 1 lb lean ground beef
  • 1 large sweet onion, diced
  • 1 cup bell peppers (red or green), diced
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup beef broth
  • ½ cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice the potatoes into thin rounds.
  3. In a large skillet over medium heat, sauté the onions and bell peppers until soft. Add the ground beef and cook until browned; drain excess fat.
  4. Stir in garlic powder, salt, pepper, and beef broth into the meat mixture; let simmer for flavor.
  5. In a greased baking dish, layer half of the sliced potatoes, followed by half of the meat mixture and some cheddar cheese.
  6. Repeat layers with remaining ingredients, finishing with cheese on top.
