  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and salt; sauté until golden brown.
  3. Stir in diced butternut squash and thyme; sauté for about 10 minutes until slightly softened.
  4. Roll out puff pastry on a floured surface and transfer to a tart pan.
  5. Spread the onion-squash mixture evenly over the pastry base, then sprinkle crumbled goat cheese on top and drizzle with balsamic vinegar.
  6. Bake for 25-30 minutes or until golden brown and puffed.
