  • 1 French baguette (12 inches)
  • 2 cups ripe Roma tomatoes, diced
  • 1 cup fresh mozzarella cheese, cubed
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 2 tbsp balsamic glaze for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the baguette into 1-inch thick pieces and arrange on a baking sheet. Brush each slice with olive oil.
  3. Toast bread for 5-7 minutes until golden brown.
  4. In a bowl, combine diced tomatoes, minced garlic, chopped basil, salt, pepper, and a drizzle of olive oil.
  5. Top each toasted slice with the tomato mixture followed by mozzarella cubes.
  6. Bake for an additional 10-12 minutes until the cheese is melted.
