  • 8 oz rotini or fusilli pasta
  • 6 slices thick-cut bacon
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • 1/2 cup full-fat mayonnaise
  • 1/4 cup red onion, diced
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta al dente in salted boiling water (8-10 minutes). Drain and rinse under cold water.
  2. In a skillet over medium heat, cook bacon until crispy (6-8 minutes). Drain on paper towels.
  3. Prep vegetables: halve cherry tomatoes, chop romaine lettuce, and dice red onion.
  4. Whisk together mayonnaise, lemon juice, salt, and pepper in a bowl until smooth.
  5. In a large bowl, combine pasta, bacon crumbles, tomatoes, lettuce, and onions. Toss with dressing.
  6. Chill for at least 30 minutes before serving to meld flavors.
