- 12 oz apple chicken sausage, sliced
- 2 medium fresh apples, diced (preferably Granny Smith or Honeycrisp)
- 1 cup smoked Gouda cheese, shredded
- 1 cup heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Cook the penne according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, warm the olive oil. Add chopped onion and minced garlic; sauté until translucent.
- Stir in sliced sausage and cook until browned. Then add diced apples and cook for an additional 2 minutes.
- Pour in heavy cream while stirring constantly. Let simmer for about 3-4 minutes until slightly thickened, then stir in shredded Gouda until melted.
- Fold in fresh spinach until wilted, then add drained pasta to the skillet. Toss everything together until well combined.
