  • 8 oz penne pasta
  • 12 oz apple chicken sausage, sliced
  • 2 medium fresh apples, diced (preferably Granny Smith or Honeycrisp)
  • 1 cup smoked Gouda cheese, shredded
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook the penne according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, warm the olive oil. Add chopped onion and minced garlic; sauté until translucent.
  3. Stir in sliced sausage and cook until browned. Then add diced apples and cook for an additional 2 minutes.
  4. Pour in heavy cream while stirring constantly. Let simmer for about 3-4 minutes until slightly thickened, then stir in shredded Gouda until melted.
  5. Fold in fresh spinach until wilted, then add drained pasta to the skillet. Toss everything together until well combined.
  6. Taste and adjust seasoning with salt and pepper as needed.
