  • 2 medium Yukon Gold potatoes, diced

  • 3 cloves garlic, minced
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 4 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping vegetables into uniform pieces.
  2. In a large pot over medium heat, heat a splash of oil. Sauté onions and garlic until fragrant (about 5 minutes).
