  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium yellow onion, chopped
  • 1 bell pepper (any color), chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lime
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and bell pepper; sauté until softened.
  2. Stir in minced garlic, cumin, and chili powder; cook for about 1 minute until fragrant.
  3. Add diced sweet potatoes, fire-roasted tomatoes (with juices), black beans, and vegetable broth; stir well.
  4. Bring to a gentle boil, then reduce heat and let simmer uncovered for 25–30 minutes until sweet potatoes are tender.
