  • 1 medium onion, diced
  • 2 medium Yukon Gold potatoes, chopped (about 2 cups)
  • 2 large carrots, sliced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup German lager
  • 2 tsp fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Sauté diced onions until golden brown, about 5 minutes.
  2. Add sliced smoked sausage and cook until browned, stirring occasionally.

  4. Pour in the German lager and beef broth, scraping any flavorful bits from the bottom of the pot.
  5. Add thyme and bay leaves; bring to a gentle boil then reduce heat to low.
  6. Simmer uncovered for about 45 minutes or until vegetables are tender.
