  • 2 cups assorted bell peppers, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 ripe avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by dicing bell peppers and onion, and mincing the garlic.
  2. In a large skillet over medium heat, add a splash of oil and cook the ground turkey until browned (about 5-7 minutes).
  3. Stir in the diced onion, bell peppers, and minced garlic; sauté until vegetables are soft (4-5 minutes).
  4. Add cumin and paprika; mix well to coat all ingredients.
  5. Add black beans; gently stir to combine without mashing them.
  6. Remove from heat, squeeze lime juice over the mixture, and toss in chopped cilantro before serving.
