  • 34 boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your choice)
  • 1 cup brown rice
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh or frozen corn
  • 2 ripe avocados, sliced
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • 2 lime wedges
  • Fresh cilantro (optional)

Instructions

  1. Preheat your grill or stovetop pan over medium-high heat. Season chicken with salt and pepper. Grill for 6-7 minutes per side until the internal temperature reaches 165°F.
  2. Brush BBQ sauce on both sides during the last few minutes of grilling.
  3. Cook brown rice according to package instructions.
  4. In a large bowl, combine cooked rice, black beans, and corn; mix well.
  5. Slice grilled chicken and place it atop the rice mixture along with avocado slices.
  6. Garnish each bowl with cheese, sour cream or yogurt, cilantro, and lime wedges.
