- 1 cup BBQ sauce (your choice)
- 1 cup brown rice
- 1 can (15 oz) black beans, rinsed
- 1 cup fresh or frozen corn
- 2 ripe avocados, sliced
- 1 cup shredded cheddar cheese
- ½ cup sour cream or Greek yogurt
- 2 lime wedges
- Fresh cilantro (optional)
Instructions
- Preheat your grill or stovetop pan over medium-high heat. Season chicken with salt and pepper. Grill for 6-7 minutes per side until the internal temperature reaches 165°F.
- Brush BBQ sauce on both sides during the last few minutes of grilling.
- Cook brown rice according to package instructions.
- In a large bowl, combine cooked rice, black beans, and corn; mix well.
- Slice grilled chicken and place it atop the rice mixture along with avocado slices.
