  • 2 medium sweet potatoes (about 500g)
  • 300g fresh green beans
  • 200g fresh cranberries
  • 4 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • 100g whole pecans
  • 100g mini marshmallows
  • 2 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 50g grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and clear your kitchen space.
  2. Chop sweet potatoes and green beans into uniform pieces.
  3. In a large bowl, toss sweet potatoes with olive oil, salt, and pepper until well-coated.
  4. Layer sweet potatoes in a baking dish, adding butter and half the chicken broth. Top with marshmallows if desired.
  5. Bake for about 25-30 minutes or until fork-tender and golden brown.
  6. Meanwhile, blanch green beans in boiling water for 3 minutes; drain and set aside.
  7. Combine cooked green beans with garlic, herbs, remaining broth, and pecans; bake alongside sweet potatoes for an additional 10 minutes.
  8. Serve warm with freshly grated cheese on top.
