  • 1 cup Arborio rice
  • 1 cup fresh peas (or frozen)
  • 1/4 cup fresh mint leaves, chopped
  • 4 cups vegetable broth
  • 1 small onion, finely diced
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a deep skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in Arborio rice and toast for about 2 minutes until lightly golden.
  3. Gradually add warmed vegetable broth one ladle at a time, stirring constantly until each addition is absorbed. This should take around 20 minutes.
  4. When the rice is almost al dente, fold in fresh peas and chopped mint leaves. Cook for an additional 5 minutes until well combined.
  5. Remove from heat and stir in freshly grated Parmesan cheese until melted. Season with salt and pepper to taste.
  6. Serve immediately while warm, garnished with extra mint if desired.
