Instructions

- Season chicken breasts with cumin, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for about 5-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
- In a small bowl, whisk together minced garlic, lime juice, cilantro, and a pinch of salt to create the mojo sauce.
- Assemble bowls by layering roasted sweet potatoes at the bottom. Top with sliced chicken, drizzle with mojo sauce, and add sliced avocado and extra cilantro.
