  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 2 ripe avocados, sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes in olive oil, salt, and spread on a baking sheet. Roast for 25-30 minutes until golden brown.
  2. Season chicken breasts with cumin, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for about 5-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
  3. In a small bowl, whisk together minced garlic, lime juice, cilantro, and a pinch of salt to create the mojo sauce.
  4. Assemble bowls by layering roasted sweet potatoes at the bottom. Top with sliced chicken, drizzle with mojo sauce, and add sliced avocado and extra cilantro.
